You will likely find that you are almost free to eat anything at all during vigorous exercise in which you are consuming glucose as fast as you can make it or eat it!
Eating while bicycling or doing other sports may not be easy, as you may want to stop while you eat, but eating while hiking is pretty much a munch while you walk endeavor.
Up in Yosemite, you can hike up from the valley floor thousands of feet non-stop, throw in a backpack, and you are not only capable as a diabetic of eating dried fruit, muffins, bread, and lots more good stuff, but you need to eat those foods to have the energy to keep going! Remember, being a diabetic does not mean that you don't need to eat and need glucose in your blood to provide energy to your body - it just means that your body is not regulating the levels of blood glucose properly as part of the disease.
Pack your blood glucose meter with you on your next hike, and pack yourself some nice whole wheat bread and bananas...
